Easy Iced Coffee Recipes

Just because Summer is over doesn't mean you have to give up those summertime drinks. There's no wrong time for iced coffee!

Cold brew coffee is a favorite of ours and so easy to put together and let sit overnight! This can even brew in an easy to-go cup or mason jar to just seal up and get out on the road

EASY COLD BREWED COFFEE
Ingredients:
1 cup ground coffee beans

6 cups water
Instructions:
Grind whole coffee beans, OR use any previously ground coffee you have on hand
Place 1 cup coffee grounds in a covered bowl or pitcher. Cover with 6 cups cold water.
Stir up the grounds so they are all wet and mixed fairly well.
Let coffee grounds and water sit in the fridge for at least 8 hours (I usually let it sit for 12 hours). 
Pour the coffee and grounds through a fine-mesh nut-milk bag or layered cheesecloth to separate the coffee from the grounds. 

This coffee is concentrated a bit, so it's usually double strength. I prepare my cold brewed coffee this way: 1/2 cup coffee concentrate + 1/2 cup unsweetened almondmilk + Stevia drops

Bonus Tip:: Toss in some coffee ice cubes to keep your drinks cool without getting diluted

Give your coffee an extra punch with vodka and homemade coffee liqueur.

MIDNIGHT MARTINI 
Ingredients:
1 1/2 ounces vodka (or coffee vodka)
1/2 ounce coffee liqueur
Optional: 1/4 ounce​ cinnamon syrup
Garnish: lemon twist

Instructions:
Pour the ingredients into a cocktail shaker filled with ice.
Stir with a bar spoon.
Strain into a chilled cocktail glass.
Garnish with a lemon twist.

PINEAPPLE SUGARCANE WATER
Ingredients:
2 liters purified water
2 sticks sugar cane
4-5 large chunks fresh pineapple
Optional: Add 3-4 Tbs. of fresh crushed mint
Ice
Instructions:
Combine all ingredients in a large pitcher. Stir.
The longer the water sits, the more the pineapple and sugarcane flavors will be infused into it
